My Second Attempt at making Cake Bites

Today I got one of my orders : 1 package of dark chocolate melts, 2 packages of white chocolate melts, various sprinkles, parchement triangles, and a product that makes it possible to use food colouring on chocolate. So I pretty much went and used everything I got (not all of it in quantity-all of it in possibilities!)
I encountered a few problems that I will have to solve in the near future. One-how do you get these cake balls to be perfectly round? I am thinking slightly more frosting-we'll see. Two : how do you get them not to crack : the chocolate ones were in the fridge till the last moment-some cracked, for the other colours, I got them out way earlier, but they still cracked. Three : how do you get the cake off the fork without messing up the bottom? Four : I need to control my parchement flow better.
I think once again, although I trashed my entire kitchen doing these, they came out quite cute. But definitely room for improvement! I think of my whole menu, cake pops and cake bites are definitely the ones I will have to practice most in the next month, wish me luck!!

  3. Merci!!

    Thank you!!!

  4. They really are pretty with the shapes and colors and everything! They would look great like at a wedding reception or something.

  6. I used to have this problem. I stopped putting the cake pops in the fridge or freezer at all. I just roll the cake ball, dip the stick in melted chocolate, and push it into the cake ball. I allow it to dry or set that way for about 30 minutes before dipping the entire thing in the melted candy. I then allow them to set at room temperature until they harden. I never use the freezer or refrigerator at all anymore. It works for me. I found that none of them crack if I do it that way.

  7. Thank you so much! I was thinking of doing that too...I am just curious as to why these problems occur randomly-every time I make a new cake pop or cake ball, a new problem arises-even if I do them the same way...but I will definitely do what you said-no problems with the ball getting too soft though?

  8. ah it erased my comment... I love the colours! And I think cake pop balls could soon replace cupcake cakes..

  9. Maybe too much frosting? Start with less and add more as needed. Depending on the moistness of the cake you are using, you may not need any at all to get the crumbs to hold together.

  10. I tried the cakepops today and they worked! I put in actually a tad more frosting-I felt the cake bites were somehow too dry (?), but kept them out of the refridgerator, so they worked! Thank you for the tip! It's true that the ball was slightly harder to handle, but the result made it worth it!
